Fighting for animal liberation and an end to speciesism
It's name is Pave – One Square Potato
You will need a sharp knife or a mandoline.
Find the largest potato you can find and wash it. I use a large Y-peeler to peel the potato and sit it on a cutting board. The objective is to make a square so cut all four corners then once you have a square shape cut finely into layers one at a time, not unlike hasselback style. Pave cuts the square side. I managed 9 layers from one large potato. Pull the layers together, one after another, and trim to shape the square further if required to keep it's shape. Discard the leftover scrape potato if need be.
Place in a preheated air-oven 250C for 40 minutes. In the last 5 minutes use residual heat. Turn down the heat after 15 minutes. Cook in neutral oil.
With a spatula remove the pave and plate up remembering you can always ask for seconds.
Pave cooks well au gratin with dairy free cream.
