Wasabi Crème Cauliflower Scallops Seared and Encrusted In Sesame Seeds
Serves 2
1 whole medium Cauliflower, washed, trimmed and the woody spine removed
Wasabi Crème; enough to cover the scallops or small wings
1C sesame seeds
5tbsp Olive oil
Flat leaf Parsley to garnish
Red Chilli Powder to garnish
Salt and Pepper to taste
Wedges of Lemon to serve
Air-oven the individual cauliflower scallops (wings) in 1 tbsp of olive oil or grapeseed oil for 15 minutes. Take out of the air-oven and paint on the wasabi crème then roll in plenty of sesame seeds. Return the cauliflower scallops (wings) to the air-oven for a further 10 minutes or until the sesame seeds are golden brown.
When ready garnish with flat-leaf parsley cut finely, salt and pepper to taste, lemon wedges and red pepper powder.
This makes a suitable entrée.
