Animal Rights Zone

for several years, ever since i had something similar at Seward Cafe, this has consistently been my favorite weekend breakfast--so,i thought i would go ahead and write it down even though it's not exactly a "recipe." nowadays, even when i go out for breakfast, and survey all the options on the menu, i generally cobble together something more or less like this. :-)

 

Ingredients

  • 2 cloves garlic, minced
  • ~1/2 cup cashews, bits & pieces (or your favorite nuts)
  • several handfuls of fresh spinach
  • ~1 cup fresh mushrooms, sliced
  • ~1/3 cup tofu, cubed
  • 1 tomato, cubed
  • salt, pepper, lemon juice, & olive oil to taste
  • optional: tamari or shoyu, toasted sesame oil, finely chopped scallions and/or fresh cilantro

Preparation

  • preheat iron skillet, on high heat
  • quickly toast garlic and cashews, with salt and pepper to taste
  • when cashews are toasted, move them to one corner , but leave the garlic spread out over the bottom of the skillet
  • lower heat to medium and coat skillet with olive oil
  • in one corner, add sliced mushrooms: squeeze some lemon juice over them & salt & pepper to taste
  • in another corner, add tofu, drizzle with oil and/or a dash of tamari, if needed to keep them from sticking, and salt & pepper
  • in the remaining corners, place fresh spinach & a squeeze of lemon juice (and tamari, if you like), and the tomato, salted
  • when the spinach has just wilted, and the mushrooms are tender, remove from heat
  • i like to serve with the cashews sprinkled over the top, along with a little toasted sesame oil, and sometimes minced scallions or chopped fresh cilantro
