Chinese Fried Rice vegan-style
Serves 3
1 ½ C brown rice, cooked rice
3 Tomatoes, medium
1 bunch of baby scallions, washed, trimmed and cut on the diagonal
1 fresh red chilli, cut on the diagonal
I can of baby corn, drained
2-3 cloves garlic, sliced
1 tsp garlic paste
1 tsp of ginger paste
1 tsp chilli paste
1 tsp cumin seeds
½ tsp onion powder
1 tsp onion seeds
Salt and pepper, to taste
½ C Nutritional Yeast or Nooch
Plant butter
1 bunch of fresh coriander or flat-leaf parsley
Olive oil
Tamari to serve
In a skillet fry the herbs. Saute the chilli, baby corn and scallions in 2 tbsp Grapeseed or Olive oil. Add the garlic, chilli and ginger paste. Add the garlic powder and onion powder. Cook for 10 minutes. Add enough water by the tbsp as required. Add the rice and break up any clumps. Salt and pepper to taste. Take the Chinese fried rice off the heat and add the Nutritional Yeast (Nooch). To make your Fried Rice buttery we highly recommend a tablespoon of plant-based butter to finish off whilst the dish is piping hot. Serve with coriander or flat-leaf parsley and tamari as seasoning.

Chinese-style Matchstick French Fries
1-2 tsp Chinese 5-spice
5-6 Potatoes, washed and cut into matchsticks
Place all the ingredients in a bowl and stir through
Air-oven for 10-15 maximum
Salt and pepper to taste
