Tropical Papaya and Avocado Salsa
Ingredients for two:
1 whole Papaya, washed, peel, deseed, cut lengthways, melon-ball or curl
2 ripe Avocado, peel, melon-ball or curl
2 tsp grated Ginger
1/2 Red Onion, diced
1 tsp Date Powder sugar or your choice of sweetener
A splash of rice vinegar or wine vinegar
1/4 fresh Coriander, chopped finely
a few Onion seeds
1 small pinch of Cayenne powder
1 small pinch of red chilli, dried
Salt and Pepper to taste
Variations: Just before melon-balling the avocado marinate the avocado with a Umeboshi plum (run it around the sides) then continue with the recipe.
