Hi Dream Apologies for the delay in communication -  welcome to ARZ!  I have a few cooking tips to go by, general rules for my fav dinners, and it goes like this:

• INDIAN- potatoes and chick peas, pumpkin and spinach
• MEXICAN - beans or falafals, avo, favourite salad, vegan sour cream
• ITALIAN - Spaghetti bolognaise with TVP (textured vegetable protein from a health food shop) or lentils in my own recipe, cook it as if it was "mince"
• BURGER - veggie burgers with loads of salad, healthy fav bread
• COUS COUS - roasted veggies and greens through a cous cous with a lemon salad dressing is nice
• Pizza - I use "Notzorrella" vegan cheese, or vegan mayonaise cooks nicely under a grill too
• turkish - falafal wrap with hommus and fav salads
