Potato Stew

2 lb potatoes, peeled and cubed

1 medium zucchini, chopped

1 medium onion, chopped

1 15 oz can garbanzo beans

1 6 oz can tomato paste

1 15 oz can diced tomatoes

1 teaspoon onion powder

1 teaspoon curry powder

1/2 teaspoon garlic powder

salt and pepper to taste

 

This is quick and easy and seems to be one of those filling dishes that just about everyone enjoys.

 

In a large pot, boil the potatoes, zucchini, onion, and garbanzo beans for about twenty minutes, until all are tender. Drain and return to pot. Add the tomato paste, tomatoes, onion powder, curry powder, and garlic powder. Stir well and heat through.
