Tofu Scramble

serves 2

 

1 block tofu

1 teaspoon tumeric

1 onion, chopped

1 small red bell pepper, chopped

8 oz sliced mushrooms

1/2 teaspoon salt

1/2 teaspoon pepper

 

This is just a really basic tofu scramble. Any kind of tofu can be used, but silken tofu will be the smoothest.

 

Squeeze any extra water from the tofu. Do this by using a tofu press or by placing a weighted place on top of it for a half hour. If you're in a real hurry, you can skip this step.

 

Crumble the tofu into small, bite sized pieces and sprinkle with tumeric. This will give it a yellow color, which will develop as it's heated in the oil.

 

In a nonstick skillet, cook the tofu and the rest of the ingredients in a few tablespoons of oil. Cook until the some of the tofu is lightly browned and the onion transparent, which will take about 10 minutes.

Thanks for this recipe Lisa. I`ve been a vegan for about 4 years and I`ve yet to learn to make anything that tastes good with Tofu.

Please post all of the Tofu recipes you`ve got. I`m ready and waiting! =)

Hi Gina :). I've been vegan for about 4 years, too, and didn't like tofu much at first. But, wow, there is so much that can be done with it. I'll try to get some more up soon.
Question....  what exactly is Tofu?   And what does it taste like made up to be scrambled eggs?  ;o)
Tofu is made from soy and it basically takes on the flavor of whatever you cook with it. That "Scramble" would go nicely with some Morningstar bacon or Fakin` bacon strips, or even Morningstar Morning Sausage, for a really great vegan breakfast (Jeez! I feel like i`m doing a commercial)LOL
