Air-Ovened 'Stand Up Little Soldiers' Zucchini Roll-Ups
Serves 4
Ingredients:
2 large Zucchini, wash and peel. I use a large Y-vegetable peeler
Grapeseed or Olive oil
My Spice mix today is:
Thyme, dried
Cumin, powdered
Pepper (white), to taste
Salt, to taste
Cayenne, powdered
Garlic paste or garlic granules
Sumac, ground spice
Dukka, store-bought
Wedges of lemon to serve. Pomegranate molasses to garnish with fresh flat-leaf parsley.
Variation: Coconut dairy-free yogurt with pomegranate molasses swirl as a dipping sauce. Why garlic granules? Because they crisp along with the Dukka.
Directions:
Pre-heat and turn air-oven on to 200C.
Peel the large Zucchini and with a very sharp knife cut as thin as possible length-ways until all the Zucchini are used up. If the last few look abit scrappy they should still be used.
With a silicone pastry brush moving quickly brush each zucchini roll-up from top to tip with grapeseed or olive oil and then with garlic paste. Each individual zucchini roll-up should have a pinch of thyme, cumin, pepper, salt, cayenne, sumac and a judicious amount of dukka on each roll-up (up and down it).
Transfer to a roasting dish or a pizza pan.
Air-oven cook for 10 minutes at 200C. Zucchini cooks quickly so it needs to be watched.
After 10-15 minutes wait until the roll-ups have cooled and start rolling them tightly from one end to the other. It’s not unlike Californian sushi where the dukka is on the inside of the roll-up. Now stand each roll-up up like 'stand-up little soldiers'. Transfer to a serving plate. Squiggle with pomegranate molasses or use a dairy-free coconut yogurt with pomegranate swirls as a dipping sauce. Garnish with wedges of lemon and fresh flat-leafed parsley, chopped finely. Serve immediately.
As an alternative the 'stand-up little soldiers' roll-ups can be served in a spiced tomato concasse having been transferred to another pan waiting for it with spiced tomato concasse (2 cans of spiced with allspice and diced or chopped tomatoes at the base).
As another alternative the roll-ups can be plant-based stuffed with sprouts or anything else you like.
If you use Made-With-Plants bacon on top it will mimic in shape the roll-up zucchini whilst in the roll up phase of the recipe. ( like the Doctrine of Signatures )
Sumac, a sour red berry and lemon juice together are well-suited
