Pave -One Square Potato

It's name is Pave – One Square Potato

You will need a sharp knife.

Find the largest potato you can find and wash it. I use a large Y-peeler to peel the potato and sit it on a cutting board. The objective is to make a square so cut all four corners then once you have a square shape cut finely into layers one at a time, not unlike hasselback style except Pave cuts right through to the end. I managed 9 layers from one potato. Pull the layers together, one after another,  and trim to shape the square further if required to keep it's shape. Discard the excess.

Place in a preheated air-oven 250C for 40 minutes. Turn down the heat after 15 minutes. Cook in neutral oil.

With a spatula remove the pave and plate up remembering you can always ask for seconds.
