Garlic Potato Mash Bash
Potatoes per person: 3 medium potatoes; peeled and cooked. 20 minutes cooking time.
Ingredients: The trio is:
Spanish Garlic, 3-6 cloves
1 red fresh chilli, cut on the diagonal and some cut into flecks
½ red Onion, diced
A splash of plant-based milk, rice milk, to make the mash
1 tsp powdered chilli powder
1 tsp powdered Cayenne
1/2 tsp Tamari
2 tbsp vegan Sweet Chilli Sauce
1 Lime, zest and juice
Sauteed the trio; garlic, onions and chilli in a small amount of olive oil or canola for 5 minutes. Add the powdered chilli and cayenne. Transfer the drained potatoes to the skillet.
Add a 2-3 tbsps of water to the skillet for another 10 minutes. When cooked add a few drops of tamari. Salt and pepper, to taste. Mash thoroughly and add a splash of plant-based milk. This gives the mash its creamy consistency. Add 3 tbsp of vegan sweet chilli sauce. Blend in. Serve immediately. Garnish with toasted sesame seeds and the juice and rind of ¼ lime.
