Hot Sauce Salsa with Marinated Baby Artichokes, Tomatoes and Avocado Smash
6-12 marinated baby Artichoke hearts in oil and a bay leaf
Serves 2
Hot Sauce; your choice
½ Red Onion, diced
2 cloves fresh Garlic, crushed
2 large Tomatoes, diced
2 Avocados, chunky style (it turns into a smash with the folding in process)
½ juice and zest of a Lime
1 teaspoon of rice vinegar
½ bunch of flat-leaf parsley, finely chopped
Salt and pepper to taste
Combine all ingredients except the flat-leaf parsley. Garnish with the flat-leaf parsley. Chill for 20 minutes. Serve immediately.
