when i was in college in kansas city, long, long before i was vegan, my roommate brought home some popcorn prepared in this way from the co-op around the corner, and then went out. the bag was sitting open on the counter, so i took a handful. then i took another handful. by the time she came home, i had eaten the whole bag, and it was humiliating!... ever since then, the addiction has continued! although some of the ingredients may sound a little arcane, this is a very appealing, nutritious, and addictive snack!


Ingredients:

* large bowl of popcorn (@ 6 cups), popped in a hot-air popper
* a couple of tablespoons of flaxseed oil (very high in omega-3) (NOTE: you can use canola oil, but it's not as flavorful or as nutritionally dense)
* a couple of tablespoons of tamari or shoyu sauce (NOTE: Kikkoman soy sauce tastes awful and chemically! use an organic brand :) similarly, Braggs liquid amino acids is not a raw, fermented food like actual tamari or shoyu sauce. )
* two or three tablespoons of nutritional yeast flakes (fortified with B vitamins) (NOTE: nutritional yeast is not the same thing as either bakers' yeast or brewers' yeast. nutritional yeast is sold in the chilled bulk bins at the co-op. it has a nutty, slightly cheesy flavor.)

Instructions:

* lightly coat the popcorn with the flaxseed oil and tamari, just enough to barely moisten it, so that it doesn't get too salty or soggy.
* then,very lightly dust the popcorn with the nutritional yeast and toss for even coverage
