Salsa 10 - the lowdown

Salsa a la veracruzana. Tomato, Onion and Green stuffed olives (pimento).

Salsa bandera. 'flag sauce' named for the red of the tomato, the white of the onion and the green of the chilli.

Salsa borracha. Drunken sauce made from smoky chilli pasilla, garlic, onion, white vegan cheese e.g., vegan feta and puique vegan-style. Puique is a white, thick sweet alcoholic drink made from agave.

Salsa de tomatillos. With green chillies, onion and cilantro.

Salsa. Spanish black olives, cilantro, red onion, lime and lime zest, spices and tomatoes. Add  splash of rice wine vinegar.

Salsa Mango with mango filet, red onion, minced garlic, chillies, lime and cilantro. Add a splash of rice wine vinegar, a tsp of sugar and garnish with cilantro (coriander). Spanish black olives contrast with the mango.

Salsa with grated apple (either red or green apple), red onion, lime and cilantro.

Salsa picante. Hot sauce e.g., Tabasco sauce.

Salsa roja. A red long chilli salsa made with plum tomatoes, red onion, garlic, salt and lime.

Salsa verde. A green long chilli made with plum tomatoes, red onion, garlic, salt and lime.

Chives are terrific in salsa. There are two ways to cut them. The usual way is small and then there is a slightly longer version too. Both are effective. There is also garlic chives found at your local Chinatown. They are like a stalk and suit a salsa too.
