I like Bullhorn peppers for paella dishes. A pinch of Cayenne pepper can be added for extra heat. Allspice berry is the Spanish name for pimento. Chillies are hot peppers, red peppers and green peppers. They belong to the Capsicum species and F. Solanaceae. F means Family. Pimenton is paprika. Pimienta is Pepper pronounced phonetically as pi'mjenta where the j is pronounced as a h. Pimento means pepper. As a culinary hint whenever you see the combination of cinnamon, nutmeg and pepper (Piper nigrum) add a pinch of allspice too. There are plenty of named chillies that we know of. For example, Habanero chillies, Serrano chillies, Jalapeno chillies and Pasada chillies to name just a few instances. Pasada chillies adds a subtle citrus flavour to dishes. Some people say Pimiento is the headliner for all the chillies in the kingdom of chillies including Pimento. Chilli varieties are all referred to as peppers. Smoked paprika (pimenton) has a fragrant flavour similar to Liquid Smoke whether that be au Natural, Hickory or Applewood and is used successfully in Paella. Pimenton dulce is also used. Chilli Chipotle is smoked jalapeno. Chilli is the most used spice in the world today. Chillies can be whole, crushed or powdered. The flavour profile of Cajun spice blend is characterised in the dishes Jambalaya and Gumbos. Togarashi is close to a Cajun spice blend and is peppery. Cajun uses Sweet Paprika and Smoked Paprika in its application. For Mexican spice think paprika and chilli chipotle etc. Rojos means Red. Verde means Green. Dulce means Sweet. Rajas means slice. Pebre is a spicy Chileno chilli sauce of South America. All are important.
How to use your green olives. Nachos with Tofu Sour Cream
Collect your tortilla chips, plant-based sour cream, grated soy cheese and slices of pimiento-stuffed green olives for the nachos.
Salsa: 2 large tomatoes, roughly chopped
1 red Capsicum, roughly chopped
4 tsps of hot sauce, to taste
1/2 red onion
salt and freshly ground pepper to taste.
Lay the chips in a single layer in a large shallow ovenproof dish. Place the grated soy cheese on top of the chips. Using two spoons, one to scoop off the other, 1/2 tsp of salsa onto the sour cream, followed by a slice of pimiento-stuffed green olive. Pre-heat your grill and place the prepared Nachos under the grill until the cheese melts. Serve accompanied with serviettes. The tofu sour cream recipe is as follows: 150g fresh silken tofu, 1Tbsp Mirin, 2Tbsp Lemon juice and 3Tbsp of cold pressed virgin Olive oil. Make sure all the excess water has been removed from the tofu using a clean tea towel. Blend until smooth.
