So MUCH of what happens as 'multicultural' or 'ethnic' cuisine is local substrate and 'ethnic' spices.
In that frame of reference, why not merely create vegan recipes on several tiers:
vegetable cuisine (popular in parts of Asiagrain-based cuisine
bean cuisines
'the same old same old' substrates (the faux meats): wheat gluten, tofu, meat substitutes, etc.

That's a very good idea Maynard. There is an éthnic' cuisine available to vegans in Australia as well. Making ones own tartin by the layering method showcases the different cuisines in veganism. I'd be into that! It's a wonderful way to listen to new immigrants and the Westons in their first vegan cookbook went out of their way to present some éthnic' delights. Vegan street food is huge here too.
