There are some food items that suit marinades including tofu, pears and mushrooms for their ability to ‘suck up’ ,as it were, the liquid marinade. There are 20 minute marinades through to overnight (in the fridge) marinades. The longer the better for a more intense flavour some say although 20…

It's name is Pave – One Square Potato
You will need a sharp knife or a mandoline.
Find the largest potato you can find and wash it. I use a large Y-peeler to peel the potato and sit it on a cutting board. The objective is to make a square so cut all four corners then once you have a square shape cut finely into layers one at a time, not unlike hasselback style. Pave cuts the square side. I managed 9 layers from one large potato. Pull the layers together, one after another, and…

For Us. For extra length. Allspice-Pimiento. To make your paella even better add in 1/2 cup of sliced pimiento stuffed green olives. Spanish peppers are called Padron peppers. I like Bullhorn peppers for paella dishes too. A pinch of Cayenne pepper can be added for extra heat. Allspice berry is the Spanish name for pimento. Chillies are hot peppers, red peppers and green peppers. They belong to the Capsicum species and F. Solanaceae. F means Family. Pimenton is paprika. Pimienta is Pepper…

Spanish Gazpacho is a speciality cocktail drink that’s been drunk throughout the decades by a variety of well-known supporters of ‘Gazpacho’ itself. It is a regional spicy peppery tomato cocktail – different regions have their take on it. It’s iced for those sweltering hot days at the golf club etc. Ingredients include: fresh tomatoes; skinned and seeded, peppers, shallots, garlic, spring onions; chopped then choose a hot sauce from the devilishly diabolical heat range right through to a…
